A kid at my high school did a "convertable conversion" on his little toyota pickup....It pretty much entailed his going hog-wild with a cutting torch and just chopping the top.
May I suggest a sawsall and a case of beer?

Cutting off the top is the easy part.Capping it again is the hard part. I want it to look great. Not like someone went at it with a saw saw after drinking a case of beer

Seriously, making a convertible out of your truck is a big job requiring many hours and quite a bit of body working skill. I've never seen a convertible of these years, except my 79 that I cut the top off of before scrapping the body. Maybe try contacting a custom rod shop to see what they suggest.
myself I would look into getting another cab and do a little practice before i butched up my truck. with a welder and some sheet metal nothing can't be done.
I think it would look pretty awesome on a truck with some 40" ground hawg's howling away with the TOP down
