Grilling and Smoking (and griddling)

I bring this up because one of the super duty threads has started people down the rabbit hole on grilling.

Since it's the end of winter and some of you (me included) are all wanting to get out there and burn some meat, let's have a thread on grills, smokers, and griddles that you either own, would love to own, or drool over, but it's way too impractical for what you do.
While you are at it, list what you love to cook or smoke.
AI created impossigrills are also allowed, so long as it is done in fun and not to be mean spirited (example, a "grill" involving a dodge in flames)...

I love the classic Weber kettle grills, but I don't have one as I have no place for one. (wood deck, not a concrete patio). That said, it's on the list if I ever put in an outdoor kitchen
I have a nice 42 inch natural gas grill that I need to plumb with a bigger gas pipe, but it does pretty much everything I want it to...except smoke
I also have a pellet smoker to keep the wife's BBQ cravings under control. I like using real apple, cherry, or hickory pellets depending on the meat I am smoking'

Favorite things to grill...steaks. I love em all, but ugly steaks (petite tenders, other names) are my favorites, along with strip steaks and sirloins. Unfortunately those are all expensive or almost impossible to find at my local stores, so they are special occasion meals (anniversaries, birthdays, etc.), so brats and burgers are my go to items. If I am doing beef, it's usually just salt and pepper.
Chicken is another. I marinade with a base of italian dressing with other spices, herbs, salt/soy and honey and then use that for either the main course or as a topper to a dish like Salads, pasta with alfredo sauce, etc. Breasts are good, boneless thighs are even better. With the pellet smoker, I do pulled pork, brisket, and ribs...

The things I drool over are some nice big beefy side burners that I could either use as for a wok, or for brewing beer. One day, I will have my outdoor brewing setup that can also be used for cooking....one day...
Another wish list item is an outdoor pizza oven, but since those are after the burners, I know that's pretty much never going to happen.

The thing I want the most but will never have is the item pictured below. I would just park it in my backyard because if nothing else, it would **** off my HOA, especially the president of which that already complains when I do a 12 hour smoke (neighbor 2 doors down)

The Weber kettle is all I've ever used and needed. Currently on my 3rd one that the wife got me for Christmas this year. I love the simplicity above all else and use it all year long. Yes, even if it's below zero and snow on the ground! Of course burgers and steaks are at the top of the menu, but occasionally chicken, fish, or venison. We buy a whole beef every year to make steaks MUCH more affordable.
For quick grilling, I use Royal Oak briquettes. If Im slow cooking, I use Royal Oak natural chunk charcoal. It lasts much longer than the briquettes and burns better with the vents closed down to lower the heat.

Nothing beats a kettle...except fire codes, HOAs and a wooden deck. we will have to replace our deck in the next decade or so anyway, so we will be going concrete, maybe outdoor kitchen then.

I spent my teenage years working and cooking in a family restaurant on the Maine coast. Then I entered military service and remained in the foodservice world for my entire 24 year career. Naturally I'm right at home on a flat top griddle. So when Blackstone came out with theirs, the family got me one. I haven't used anything else since. I cook breakfast on it and anything else that I can come up with. I'm not and never have been a fan of flame cooking and conventional gas grills are OK as long as I have a convertible flat top that fits over the flames.........blackstone makes one.

Awesome. When I do use a griddle, I use a lodge two burner griddle that fits the burners on my stove

I use a small cheap kettle from Canadian tire up at my Cabin, works well cant beat charcoal to cook on.
