Has anyone had any luck dialing in their dash brightness?
When I get in my truck at night the dash is blinding and I have to always dim it. Then if I decide to turn off my headlights in a parking lot or whatever the dash turns back to daytime mode and blinds me. Yes, I can manually choose night mode but then it's always in night mode.
Dash lights on older vehicles were much better. You just had one **** for everything. Now I have to mess with ***** buttons settings yada yada.
It might be the daylight sensor on the front of the dash (under the rearview mirror close to the windshield).
If you cover it with tape or something it will sense that it's dark, and make the dash dimmer. This sounds like your symptom, and if you cover it you will see that nothing changes. Not sure how to test it though.

2017 here and no issues once set to where I want it.
I thought it was just me, I am always fooling with the dash brightness buttons with my 17 5.0, I have never fooled with such things in any other vehicle i owned.

my 17 5.0 stays where I set it. I do only set it in park while running and I always push OK.
I also have noticed if it is completely dark, or it comes on when driving, then it works like it should. But if there is any street light the dash works correctly but the radio doesn't.
