How can I make the throttle less sensitive

I have a 1993 ranger XL 4.0L and I have a few Q's, first where is the adjustment screw to aim the headlight/s at?
How can I make the throttle less sensitive when I first push on the gas petal? The Ranger /w it's 4.0L V6 likes to jump forward with the slightest touch of the petal. Is there any way that I can make the petal less sensitive to the touch?

Thanks NorthPac

The accelerator problem you are having can be fixed simply by putting a couple of zip ties on the accelerator shaft by the gas pedal. I'll get you a link to some pictures....
