I know I'm not a '60 owner, but I didn't think you would mind if I chimed in anyway.

According to "Ford trucks 1957-67" by Paul G. McLaughlin, the 1960 292's in pickups were painted as follows.....
"red, blue, black for block, black for accents".
I know books can be wrong sometimes, but I have seen a few original un-molested 1960 trucks over the years. They were.....
Block=black
intake=red
Valve covers=blue
accents (air cleaner, starter, gen, oil filler cap, etc.) = black
The blue valve covers did have the "FORD" block letters that you have described.

My engine is not original, but it came from another pickup and I've matched the block casting (ECZ-6015-A) as a 56 292. I power washed it the other day and I can find no trace of yellow as the mid 70's "spray bomb" corporate blue flakes off. My best guess is black under there, but I'm not sure. The intake is a ECZ-9425B, and it's clearly showing RED coming through. The heads are ECZ-B 4bbl, and they too show no signs of yellow. The valve covers have the block FORD letters, and as the corporate blue comes off there is bare metal underneath, so maybe Kenny is on to something with his blue valve covers!
Whatever the original colors, when I repaint it I'm going with a yellow block with grey valve covers mainly because it looks cool!
Yellow seems to be a color combo that many stock guys have chosen, and it looks much cleaner to me than the red over black (and blue!) that may or may not be stock.

Your valve covers are NOT supposed to have the F O R D letters on them. They were plain in 56. And only the trucks had yellow blocks in 56, the cars were red and I think your block is a car block by the #'s.

I got the block ID info off Mummert's y-block website but haven't been able to verify it anyplace else. I was told years ago that the engine came out of a 57, which would make sense with what you're saying about the valve covers.
I think I'd actually prefer the smooth valve covers anyway, and put the vintage "Power King V8" stickers on there as I've seen in a few restorations. Plus, somebody cut a hole in the right side valve cover to install a PCV system that has since disappeared.
Now, to find some smooth, stock 56 valve covers...
