I went to the car wash, turned the engine off, got out and left the key on the seat for the attendant. The truck locked itself and I didn’t have the spare key with me. Why did it do that? And how do I avoid having it do that again!

Vehicles have been doing this since electric locks were invented. Usual cause is the door switch getting sloppy and making unwanted contact when the door is closed.
I sent my daughter to college with a spare key zip tied under her car and a handfull of zip ties to put the key back when used.
I never leave a key in a vehicle if the widow isn't open. Why your truck did that?, I have no idea, I don't even know what truck you have. I'm a big believer in spare key zip tied under every vehicle or at least in my wallet.
