It would be interesting to try to recreate the event with another truck with adaptive cruise and lane centering and see if the software is the culprit. I know mine tries to dive right or left under certain conditions, particularly when it encounters an exit lane.
I'm not sure you would get the same result. I was holding my steering wheel straight when it went hard left. It was definitely pushed from the back right corner that made it go left.

There is usually a Tie Rod / Ball joint/ link issue.

If you also had a buzzing sound it may link the wheel bearing into the options also.
