Performance issue
I am a new member but have visited these forums over the years, (my current 08 F350 6.4 is our 3rd Powerstroke truck), and learned a lot from all of you.
I purchased the truck several years ago and have very few issues with the truck. The HPOP went out and was replaced 2 years ago along with 2 injectors. #8 glo plug and the alternator were replaced along with the up pipe this past February. The truck ran like a champ as usual up until 3 days ago. Once the truck gets warm, it acts like it's in limp mode. The boost gauge reads normal during acceleration but the truck does not act like it's getting any boost. During the chasing down of the usual suspects causing these symptoms, I am a little embarrassed to admit that this is the first time I realized that this truck has had the DPF and catalytic converter deleted. I also noted that the new up pipe the shop put on has the EBP tube on it so they moved the EBP up. (They used the old EBP which I replaced on advice from the before realizing the delete) I have checked MAP and EGR and readings are in range.
Update- I have now changed out the MAP sensor with no change. The truck does not have a tuner and has run well since I bought it.
What am I missing? (And what information did I not provide for eyes off diagnosis?)

Your truck doesn't try to regen at all? That leads me to believe it is tuned for that (Like a DPF-R) tune.
Are the EGT sensors still plugged in. (Where the DPF was, look up for harnesses or plugs. Should see three in the vicinity above it. You may find them wire tied to the frame, or installed in the bungs of the "test" pipe that replaced the DPF. Without sensors. the truck won't like it if they've been removed.
What was your idle speed when it was running well?

I did indeed find all 3 sensor harness plugs zip tied to the frame rail without sensors. (This discovery confused me based on everything I have read regarding DPF deletes)
I do not have any maintenance, MIL, or CEL lights OR stored codes in continuous memory.

Towing a fifth wheel, it would jump into limp mode on acceleration. ECM didn't like the values.
Installed the missing sensor and wire tied it to the frame as most do, all was good.
Not saying by any means that it is a contributing factor as I'm a willow tree stroker. But from what I gleaned from assloads of time and research is the ECM needs to see every PID filled to operate as it should. It might not be the fix but it certainly is a problem that needs to be addressed.

Boost would drop to the floor but it still ran well, but excessive loss of power.
Shut her down for 30 minutes to loosen my sphincter and maybe make it until the next grade towing. Then start it up and repeat for 200 miles to get home.
I don't generally make friends with *******s, but I did until I figured this out.

Spartan diesel ( now gone , sued out of business by the EPA) used to be one of the popular DPF/EGR delete tuner companies, their tuning didn’t require any of the exhaust sensors that surrounded the DPF to still be there.
