Because of the large size throttle input will be sluggish making it a dog to drive.
I would not go bigger than a 650 CFM and closer to 600 CFM would be better.
FYI I ran a 650 CFM and 750 CFM on a 360 non Ford but a motor is a motor, in a 1/4 mile drag only car.
The 650 had a better off the line feel, the 750 was flat and had a bog I had a hard time to work out.
Top end speed and times where the same between the 2 carbs. If I was not so lazy and did more racing I would have put the 650 CFM back on.

I am currently running a 600 CFM Holley on a 460. Ford 460's came with a 625 CFM Holleys from the factory. Using an appropriately sized carb makes tuning easier putting the part throttle slots in the right position with the throttle blades.
