Bought three avocadoes today, 78 cents each. They are a good source of potassium according to my doctor. So are potatoes I am told. Didn't know that. Guess I will start buying potatoes now too.
My cousin, whose kid has been hanging around here, decided that since Lucky Store had a sale on beef & potatoes, he would help out with groceries. Now I'm officially "wealthy", if wealth was measured by corned beef and potatoes. I still have all of that ground beef. Not that I'm complaining. Since I love those inch thick burger patties. You've heard of fish n chips? I made "beef n chips". Just beef meatballs, rolled in flour, and fried like chicken. And chips, since I am potato wealthy. Is it wrong to call a beef meatball, a Chinese Falafel, and forget to mention that it's all beef and not vegetarian?
Right or wrong, I don't know. I'm trying. Since I have zero Irish ancestry, my corned beef is only based on what I know to do.
Corned beef is actually on the menu in Chinatown. Old school restaurants, always served corned beef, roast beef, roast pork, roast turkey, roast lamb..... Along with mashed potatoes, gravy, burgers, fries, and sandwich options. That's just how it was ages ago, when society was different. A lot of the kids in my generation would have grown up eating a combination meal of Chinese/American food.
Mine starts with a layer of potatoes, carrots, celery, and onion. The meat sits in top of the vegetables, and steams. The cabbage is added last. I layer it over the meat. It's sort of like what Polynesians do when they cover the meat with taro loaves. It's a lid to trap heat, and the juices continuously baste the meat to add flavor and keep it moist.
I bit your turns out better than what we had for lunch. I took Maria out for lunch it was a bust, the only place serving corned beef and cabbage did a poor job at best. The beer was good, the food not so much!
