I'm converting our fifth wheel to a lithium battery. I want to disable the truck's charge line until I decide if want to add a dc to dc charger. In the manual it shows fuse numbers 7 and 26 as trailer tow battery charge. Does anyone know why there would be 2 fuses for the same thing? By chance anyone know if I pull one or both?

I probably wouldn’t mess with the truck fuses. I would go into the junction box for the 7 pin and disconnect it there. Crimp both wires and label them. i would just make sure you still have power running to your emergency brake. Most are tied directly to the battery, but these rigs are notorious for being wired crazy so I would just double check you still had power to it after disconnecting.
Looking at the wiring manual for my 2019, it looks like there are two fuses because Ford used the same harness for trucks with and without the trailer tow module. You pull one fuse if you have a TTM, the other if you don't. That should be really easy to test on yours, minus the whole scenario of having to start the truck, put it in gear, etc. to get the charge power to start anyway.
It sounds like a dc to dc charger might be easier if I can find enough videos showing how to get it connected properly. There is no junction box on my fifth wheel that I have found. The 7 pin cord just disappears under the fiberglass. There's a wad of wires coming out in the front storage/battery box. I'm sure one of them is probably the one I need so will do some exploring. I do have a dc to dc charger in my cart on Amazon. All I have to do is push the buy now button which might be easier.
