The charcoal canister should not be deleted. The fuel vapor from your tank vents through the charcoal filter and prevents raw fuel vapor from venting under the hood. If you delete it there will be a strong gas smell. If you plug it your tank will swell when it gets hot because there is no vent anymore. Everytime you open your tank you'll get a hissing noise or it will spit at you because of the pressure built up.
You do want to make sure the rubber lines going to it and to the PCV aren't brittle or cracked.

The "coffee can" is your vacuum reservoir.

The coffee can looking canister on the passenger side inner fender is the vacuum reservoir for the emissions system.
No relevance to the fuel vapor (EVAP) system.

The EVAP cannister should have a line in from the tank vent and a line out to the PCV which IS hooked to the vacuum system.

On a 4.9L engine truck the CANP is plumbed to the throttlebody. There is no PCV connection like the 7.5L gas engine trucks.

That is your connection to route it through your PCV system.
