In your part of the world, I would say your best bet is to try and find an old grain truck. Since they don't get driven on salted roads much, if at all.
Have you considered just replacing the floor pans. Most of that sheet metal is available.
Also, as far as interchangeability the 61-63's have a slightly lower roof than the newer trucks and some of the big trucks have a high roof, subtle differences you need to look for.
61-63 are all interchangeable up to F700 I believe. There are subtle differences in the step "ribs" but basically the same cab. 64 will interchange as well but the roof is 1" taller. While a newer (65-66) 4x4 cab has the step and could be used, the holes in the firewall are different for the newer engine components, heater, etc. Like CD said, finding a larger truck as a donor is a good idea, but I would stick to 61-63 so you have the same roofline.
