Convert from power steering to manual? Done it?

Pitman arm is different and WILL NOT FIT. Input shaft is the same. They all rotate the same way as can be seen by the relative position of the sector shaft housing, input shaft, and mounting bolts. Looks like that note applies to *all* the steering gears but is simply omitted from all the other choices since it's irrelevant.
I think at the very least, we've given the OP something to work with.

Agreed. I like when oddball projects like this come up. 99% of the threads here can be answered with "buy an FSM and do what it says". It's really interesting how much can be learned by accepting the possibility of a bad result and just doing something cuz you feel like it *could* be done- and to watch, and help, others go through the same process.

The steering gear is variable ratio. Easy to turn in the shopping center at low speeds and low assist on the highway. I assume that flow reducer would work at all times. Why would you want less power assist in a parking lot? At least try the system without that flow reducer doohickey first.

you can modify the saginaw pump easily to reduce pressure and flow by getting a different flow control valve/spring setup.
