Recently bought a 1978 F150 with 351 - when we had the truck on level ground, it runs/sounds great but as soon as it is on an incline, the engine sputters, runs rough and will shut off. Barely got back in the garage but as soon as it was on level ground again, engine started running great again. What should we be looking at to fix this?
I agree I'd start with the float level. if that's not it I'd wonder about the pickup tube and screen in the tank. if you have dual tanks switch them and see if it makes a difference.

Float too high or a old leaking power valve will do it. Could be several things though, those would be my "usual suspects" lists. If this just started out of the blue, I'd favor the power valve, or even just a float needle & seat not sealing well.
I'd be looking at a quality carburetor rebuild kit, and you can't be too clean doing the rebuild. Take time, read and understand instructions.

When we bought it, fuel was leaking from the accelerator pump, so we changed that. I bought a carb rebuild kit to get the accelerator pump with the plan to eventually rebuild it. Looks like that will happen sooner than later.

I bet when you changed the accl pump you flipped the carb upside down right?
If there was junk on the float bowl floor you now moved that all over the place.
I think pulling the carb apart fore a good cleaning and blow out / rebuild will fix the issue.
