I agree with dad that although it's certainly possible to restore it, youd really only be keeping the frame, engine and trans... making this project out of reach.

Okay, if the truck will not be a concours show piece. What do you want to do with it? It sounds like she is structurally sound. Whatever you do, don't junk her. I fixed a rotten bed by cutting out the rust, riveted in some sheet metal on the wheel wells and screwed firing strips into floor that was not cancerous. Fully functional, and looks okay.
Do something like that and you have a saleable work truck. Then sell it and buy your dream.
