Can someone tell me the purpose of removing the catalytic converter? One of the PO of my 97 f250 had it removed and then went with 2.5" exhaust. Thanks for any help.

Nothing. Early (1970's) cats were restrictive and robbed horsepower, but that problem has been fixed for the last 30 years.
Cats do some times breakup internally and start to rattle, so that might have been the reason to remove it.
Less restriction and better sound, none of my vehicles have one.
Less restrictive isn’t true for a properly functioning converter. If the converter has been damaged by a poorly running engine or if the catalyst has broken apart then yes. The two converters in series do quiet the exhaust like a muffler. Good for you. You must not have emissions testing. I do not have emissions testing but I still had a converter installed when the I needed a new Y pipe. I like clean air.

No emissions testing here and I like clean air also which is why I don't live in a city.
30 years ago was 1993, not the 70s. Even early 90s cats were so so. Late 90s we finally saw OEs putting out very efficient exhaust systems for fuel economy and power.
80s cats usually flow poorly and are huge. The main one on my 89 Vette is 10lbs. Modern three way flows better and works better...plus makes more power.
I junked the OE cats on my 88 F150 long ago for a single high flow. The F250+ ones are hilarious in size, look like a boat pontoon.
As others stated, poorly running engines can clog them with ease. Drive it as is or pop on a modern high flow. Up to you. I think my pal has a single 3" laying about. I have a DI/DO 2" if you want it.
I'm not certain what you are asking. There are people that will remove your catalyst without asking. They bring their own Sawzall and turn it in for money. They will not even ask you or let you know they are doing it.
