So it turns out my current gas cap no longer vents, however whenever i go to find one for a 79 ranger i see the low style (not deep) so i bought one and it doesn't fit at all...
This is my current cap and I have 0 clue what it could be off to find a replacement, the closest depth wise I have see is the rounded up to 76 style.
I will also note that this doesn't fully lock on, it get to a point then just spins again,
Would one like this work

It only should vent to allow air in as fuel is pulled out by the pump. Two of those ears lock it, two allow it to be released without built up pressure blowing gas in your face and down your arm. If your truck calls for shallow and you try a deep one it will spin and spin. This below is what RA lists for it, or one like it.

That's the exact cap I bought and it simply will not go onto the filler. I don't have the truck here so I can't get photos of that till Monday,
We know the tank was dropped to replace the sending unit, is there a chance they forgot the vent tube hookup to the canister in the bay?
I have same issue. Bought the so called correct cap for my 78 F350 and cap is too shallow. No way it will fit. Haven’t dug into this further yet but my next step would be to try a cap for an earlier model?
ps: My in-cab fuel tank behind seat has no provisions for a fuel tank vent and new cap I bought for that tank (that actually fits…) was causing fuel tank to pressurize which is not good. Drilled a small hole in centre of underside of cap so it can now allow air to travel in both directions as needed.

Could be they forgot, or could be they damaged the filler inlet? When you get to the truck, maybe take a close look at the tube, maybe measure the ID too.
There are two caps possible for 77 through 79. One is evap, one is non-evap. The one you show, is non-evap(emissions). You can get them at the parts counter. There are multitude of tops for them, but as long as the lower portion is that deep two step, should work fine
I would look into WHY your cap will not vent. Give it a good cleaning with some spray brake cleaner. You can always drill it a bit from the side (in the little bump) and in the inner center part. If the old one will not lock down, you either bent the 1st or 2nd set of tabs. The first (outer) set can get bent by mealy drooping it. You might check them and maybe bend them out a bit.
Or you or someone put the cap on wrong, and man handled it and bent the angled ring lip edge on inside of the end of the filler neck, that the little tips (on the cap) are suppose to ride on and lock on to. To get a new inner lock down ring, you have to get a new filler neck.
The plastic cup (mounted to the inside of the bed) where the filler neck passes thru has a rubber gasket. And over the years and gas being on that rubber gasket makes it hard as a rock. And when you try to remove it you can crack the plastic cup.
The other gas cap you showed if for a 74(?)-76 exposed bed side filler neck. Vent tubes do not get bypassed, they normally get plugged, or the tank gets replace with a none evap tank.
I've run into this problem also, you may need to find a filler neck off of a truck with a non-evap tank since you need a vented cap. I have a 76 that I put a non-evap tank on but used the evap filler neck so the cap I bought wouldn't fit. There seem to be two gas caps/filler necks. One has slots for a shorter "shallow" cam cap, this is the non-evap one for a vented cap. The evap filler neck has deeper slots for a deeper cam filler cap.
