I usually grill mine with beer, butter and garlic with a little oregano, parsley and basil I wrap them in foil to help keep it together until cooked.

I always fry my catfish in a mixture of cornmeal and flour. I use raw egg or milk to dip the fish in, then coat it with meal/flour with some salt & pepper thrown in. Sometimes I use different spices, like cajun or Old Bay or italian herbs. Fried catfish is the best, and since I see you're in Georgia, make sure you have a mess of greens to go with it!

I always filet (is that spelled right) the cat-fish. THen dip it in egg, then into bread crums then I fry it. It tasted pretty good!

Yes, I forgot to mention the fillet part! (one L or two? I don't remember) Either way it is good.

some of this sounds pretty interesting. My other half tells me
that there is only one "L". Long as it ain't got no bones, that all I care about.
My process is.......coat the filet in flour, shake off excess then dunk
then in raw eggs. Then in finely mashed up ritz crackers or half and half gralic (or other) and plain finely mashed croutons.
For those of you that deep fry.....next time add some clean corn on the cob. When it's done it will float to the top like the fish does"fried corn on the cob ain't bad".and yes always got a mess of greens.

That sounds good too, Dutch. I have some catfish in the freezer, think I'll get it out now. Between this thread and the ones about biscuits and twinkies and fair food, I'm surprised I've lost any weight!

I like coating catfish nuggets with a combo of flour and taco seasoning (powder) then sauteing them. Add to warm taco shells and put cheese, salsa, sour cream and shredded lettuce on top. No, seriously!!
