The 08-10 front seats don't have an armrest built in (because the center console is a lot taller and is used as the center armrest in those). So be aware that you'll be loosing an armrest by swapping in 08-10 seats.

Would the center console also fit if one got seats and comsole

Possibly. The 08-10 center console bolts down using brackets that go over the driver and passenger seat inside mounting bolts. The 6.0 years (at least the Excursions, I assume the trucks are the same) the center console bolts directly to the floor using four little 6mm bolts.
While I have both a 2010 F250 and a 2005 Excursion in my driveway, I've never actually tried swapping the interiors between the two. I will say there isn't a lot of difference in comfort between them as they're basically the same seat with only minor differences. If I had to pick between the two, I'd pick the 6.0 seats because of the built in armrest.

And here's how a 2005 Excursion center console mounts (again, I'm assuming the trucks are the same). So the 08-10 does mount differently from the 03-07 , but they still may be a direct bolt in, don't know for sure. But if you have the ability to cut and weld a little on the 08-10 center console bracket legs, it'd be worth a shot.
What about the seat wiring? I have a 2006 Lariat with power seats and no heat. I’d love to swap in the updated 08-10 King Ranch seats and center console. Are the electrical connections compatible?
Does the Lariat wiring harness have a connector for heated seats if the truck was built without that option?
