Question? Can a 91 5.8L with GT 40 heads be stripped of the EFI and place 4 barrel carburetor. Also changing trans to an AOD. My son had this engine built and from the start it runs rough, rich, and fouls the plugs in less than 50 miles. We are trying to get this rig ready for his son, my grandson. Now we are tired of fighting it and want to go back to basics. Maybe an after market stand alone EFI. Any suggestions?

Yes

There is no good reson for this so the truck must have a pre-existing problem(failing computer, wiring short, harness mismatch, failed MAP sensor) or there were mismatched parts installed(ex: stock computer with larger injectors, non EFI compatible cam installed). If you want to have one last stab at fixing it with some help post up a detailed list of everything that was changed from stock, codes present and fuel pressure measurements.
As far as I know it CAN be done if you prefer to run a carburetor you can look into what's called a "standalone" controller for the transmission. The best route for longer term reliability ETC.. would be to find out what's happening with your EFI system and make it happy My guess (if you are using all of the factory injectors etc. from the 351) is you may need a tune to accomodate for the change in the flow rate from the cylinder head. I'm not sure if the '91 is speed/ density but if it is you made need to upgrade to a mass airflow type system to get some tuneability.
