I had to pull the heads and have a valve job done on my 351, it has about 75,000. I am replacing the timing chain and oil pump while I have the engine apart.
Would it make since to do a ring job? The cylinders are in good shape (I checked taper), but I notived a little oil in one cylinder. I don't want to pull the motor, was thinking of pulling the pistons and re-ringing?

If the taper is within specs and the cylinder diameter is fairly constant, I'd leave it alone. With only 75,000 miles on the engine the rings are broke in but way far from needing replacement.
Wipe down the cylinders with some 30w oil and stuff CLEAN rags in the cylinders to keep the dirt out. Wire brush the top of the block and the lifter valley. Take a dremel with a grinding wheel and clean up all the drain holes (casting flash and other crud) in the lifter valley, block, and heads, and flush with diesel oil and then a couple of quarts of 30W. Reassemble the engine(paint what you can while it's apart), and finish painting it.
Fire it up and you've got an engine that will last another 100,000+ miles.
