Up to you. I can't imagine it being too far off, if at all. I would check it against a GPS or something. Who knows, the truck could be off a bit with the factory size.
It's questionable how accurate the DTE actually is to begin with. If you are concerned, which it sounds like you are, then change it in Forscan. My opinion is that the difference in tire size is minor (unless you had 33's) and won't make much difference, if any. Also dependant on how accurate the truck is to begin with.
Now that you have cleared that up....31's to 35's is a pretty big jump. My other truck came from the factory with 31's. I swapped to 33's and the 1-2 mph discrepancy never bothered me, but I bet 31 -35's would be enough to make me want to correct it.

Depends on the trim level, there are several different overall tire sizes that came stock on the 4x4 SD ranging from 31" to 34". It's not necessary to reset the truck using ForScan, it's just a matter of how much your speedo and ODO being off is going to bother you.

Thats part of my concern, .....my speedo will indicate 75 mph but the gps says I'm doing 81 mph. So in a 70 mph zone I'm going 11 mph over the limit and with my luck, I'll get the ticket lol
