Alright, 351 Cleveland here. I checked the oil today when I left and it was a little under half between the safe lines. Went for a drive and when I got back it was right at or a little under the lowest safe mark. There are still oil streaks on the stick like it’s still draining into the pan even after 3 hours of sitting. So I’m just wondering if it’s normal for it to drain back into the pan this slowly or am I actually a little low
if it's warm it will drain back pretty fast, 1/2 hour is more than enough. if you didn't pull the dipstick and wipe it off when you checked it cold it may not be an accurate reading. sometimes the oil will climb up the stick a little, not very much but it can happen I see it in equipment fairly often.
If your oil drain back holes in the heads are plugged with broken up valve stem seals it can take over night. The original owner of my 78 would do a early AM start, drive half block to gas station and check and add oil. The thing smoked so bad you couldn't see to back up. When I got it and went to pull engine I drained the oil and there was 3 gallons of oil in it. Drains were plugged with valve stem bits and sludge. If you have good valve cover gaskets the oil will fill the valve covers till it runs back through the pushrod holes. Just a possibility.

You don't say, but was the truck on level both times. After 3 hours of sitting unused after getting the oil hot, I would expect to find the oil level the same as if it had been sitting overnight or all week unused.
Did you pull and wipe the stick clean, then dip it in the tube again before reading it?
