There are no PROS to deleting them. It will cause unhappy oxygen sensors leading to incorrect fuel trims. It's bad for the environment and like you said "IT'S ILLEGAL".

My 2000 7.3s never came with a cat. Some owners that have them will cut them out along with the muffler for a true straight pipe = improved air flow exit, lower EGTs. It is illegal to remove if equipped so finding a shop to do this for you with a blind eye may present challenge to you. You could also gut the internals and reinstall.

the ultimate cost is you’re children and grand children not having quality air to breath as all these people remove cats and emission controls.
Without even taking the growing lungs of children or grandchildren into consideration, and without paying any attention to what all these other people are doing in removing cats and emissions controls...
... the biggest cost may be to one's self.
Afterall, the owner of the vehicle is in the closest continuous proximity to the vehicle. Everyday. Every drive way. Every drive thru. Every parking lot. Every time the truck is loaded. Every time the truck is hitched.
Every time the family gathers around, they, and the vehicle owner who deleted the cat, are exposed to the unchecked emissions that the cat mitigated. Every day.

also dependent on what motor you have. newer rigs will have greater chance of negative issues. i have been considering it on my 06 6.0 to keep cat from being stolen. apparently there re no CEL issues on this rig.
You may not be able to trade it in at a reputable dealer. Or if you can there may be a substantial deduct for the replacement parts to make the vehicle sellable. At the time of manufacture Ford did everything they could to meet emissions and provide power and mileage at a price point. In this day and age it's just best to replace a defective part with new. JMO
