make sure your fan clutch is working right. I believe you should be able to notice the drag on the engine, and the sound of it blowing more wind, when it's hot enough to fully lock up. I've no personal experience though.
second. You weren't towing in 5th/OD right? except maybe cruising on flat roads? It's bad for 5th gear longevity, and lower gears equal faster engine rpm which runs the cooling system faster. You probably know all this though.
I think its probly the Fan shroud. Ive had very little luck with properly working fans on my cummins
with enough coolant and heat dissapaiting from the radiator along with alittle air directed by the shroud it should run at thermostat temp pretty easy. Regardless of wether the Fan is going full bore or not.

There was about 30" of snow when we were up there. About 26 now . Thats at the gaurd Station. Theres 2-5 ft drifts up high.

I have read that the 6bts run hotter, looks like you have the super cool rad, but a shroud might help but a pita to make. I have the 4bt and nv4500 in my f250 ‘72, I would say gear spread isn’t ideal but the Cummins handles it ok. I’m ultra picky with mine as this is my first engine rebuild, I have to remember to step back and say it’s running just fine, I worry about every little noise and such. I will have the radio on for a bit but then I get to where I’m saying I can’t hear the engine, need to shut the radio off to monitor everything.
Yours sounds like mine in the cab, engine noise significant. Not sure about your turbo whistle? I put the mat on the firewall inside, need to fit and install some insulation sheets to cut down on some of those decibels, glad I don’t live in an HOA.
Nice job, you should be proud of the result. I just sent my IP, injectors, and lift pump to Area Diesel Service in Illinois, everything runs a lot better. I had all new components but they had to wear in and then be readjusted, runs great now. Want to start tuning the air and pump.
Kinda jealous of you westerners with all your good driving territory out there! Nebraska is by and large a gravel road grid.
