Mc 2100 venturi size difference

Howdy all. So the old mc 2100 carb on my fe390 has seen better days. The venturies are 1.21 but had a near new clone that I swapped on after a bad stuck float situation I had on the way to work the other day. Torque sucks now and noticed it has only 1.08 venturies. It runs and idles, and starts just fine, but is a putter now. Is this just the venturi size difference? It seems 1.21 was just fine, and was fun, but don't think this old boy is worth another rebuild. I see that the 1.33 venturi 2100 are hard to come by and for $50 less I could get a Holley 500. I love the motorcraft but I could use a bit more torque would the Holley 500 be a better choice than the 1.33 mc? Also I installed a fuel pressure regulator set for 6.5 lbs due to my pump pushing almost 9lbs into the old mc carb and probably causing the original issue. Want to stay 2bbl because anything over 3500 rpm is never happening. Just low end torque for me. Thanks!
