Problem with engine coolant temp vs oil temp

Have learned a lot about my f250 2004 6.0 here !
My 6.0 has been bored over 20 and rebuilt using ford motocraft parts about 30000 miles ago...
I'm on a road trip towing my 4500 pound rv ....normally my ECT runs around 190 to 200 while towing...EOT runs around 195 to 210 while towing...
About 4 months ago my ECT suddenly dropped to 162 then came up around to 172 and my EOT still staying around 195 to 210....
I changed my thermostat and up to now that seemed to solve the problem......

Then while on the road the same thing started again......in researching I find the you shouldn't have more than a 15 degree delta between the two..I'm now in Michigan (traveling from Florida) and two different mechanics have no clue why ??......thinking of installing another thermostat and see if that works...

Also not sure this has anything to do with the temp thing but about 6 months ago I installed a new AC compressor and has been blowing ice cubes but a few days ago it stopped blowing cold air...checked the vacuum line but it is still connected and good vacuum...

Any help would be greatly appreciated.... Thanks

Well didn't receive any feed back but think I have found a solution ...hope it will help someone down the road...
I ordered a Mishimoto 200 degree thermostat... And so far its working...At 65 mph the numbers are....ECT..196......EOT..202.... Non towing...will see when I hook up next week..

Like I said hope it can help someone down the road.....

I just now saw this post. If your oil temps are exceeding your coolant temps you may have a partially plugged oil cooler. I am dealing with this in a 6.4 and I understand the 6.0 isn't much different. On the 6.4 the specs say there can be a 30 degree delta in temps and it will turn on the wrench light. On the 6.4 once oil temp hits 260 degrees it will go into reduced power mode. When you rebuilt the engine did you replace the oil cooler?

I work as a heavy diesel mechanic 30 plus years. what I have always seen no matter the hp or displacement is a 30 degree oil temperature to coolant temperature difference. Oil temp always running 30 degrees warmer than coolant. I would try to verify gauge operation by using a infrared gun. check it in certain areas when functioning normally then when it is malfunctioning go to those same areas and check again. that way under normal operation you will see that oh that top hose is 5 degrees warmer or cooler than gauge so you will have a baseline under normal operation then if it messes up op you can recheck and verify gauge sounds kinda like your temp gauges may be malfunctioning. when the cooling system overcools or undercools the engine the oil temperature follows it up or down by 30 degrees

All has pretty well been verified and that 30 degree difference is more in my case. Go to the 6.4 forum and read the history of my engine and read the vinegar anyone thread. It will explain what happens pretty well.
