Squirrel -- I get it. My wife loathes the buggy, she's never even sat in it. She tempts me with a 'vette if I'll sell it, but I can't bring myself to get rid of it. The camper will be fun too!
TX Crawler - I still find empty seats with the crew out here in CO. I was also tired of continuous mods and expense. Id cometo the point that I needed tons and I didn’t want to drop 12K . Happy Wife = Happy Life. We’ll enjoy the camper alot more as a team
I have had two. I got both at Pep Boys and I don't recall the name brands. Both were heavy rubber and there was NO danger of them flying out. Both were "stiff" enough that the ridges in the bed floor were no longer a problem to knees. Both lasted the entire time I owned the trucks (156,000 miles Chevy C10, 275,000 Ford Ranger) and neither had any sort of bed cover.
So IMHO any heavy name brand will meet your criteria.
If I were in the bed mat business I would mark on the matt where to cut holes for the 5th wheel hitch pucks. But that's just me.
I use the stall mat. Haven't had any reason to worry about the wheel wells not being filled. And if your main concern is your knees - I don't usually crawl into the corners, so that wouldn't be a concern.

I had an '09 4dr jk on 38's -- it had gotten to the point of bending shafts every time I took it out. I couldn't, either, bring myself to drop the money on 'tons so I sold it and upgraded to the buggy. Sure, it'll do everything I point it at but, I miss the Jeep. I miss being able to drive it on the weekends with the top off, etc.
i have a 6' x4' 3/4" inch thick stall mat from tractor supply. it has round qtr sized bumps on one side and fairly smooth on the other. Mine is bump side up
On my F350. Restaurant floor mat. Easy to cut for fit. I have a piece that fits where the hitch is when removed. Thick rubber so nothing slides and water passes through and it sits in the bed ribs so it drains very well.

I like that idea. Think it'd be too squishy for use under a slide in camper?
