I am going to have my seat out to be re-upholstered this week. I am going to the time to grind, repair and maintain the floor in the cab. I have a 1978 F-250. It is going to be a work truck that I expect to get dirty. I am inclined to POR-15 the floor, prime and paint. Possibly cover with bed-liner to make cleaning easier. I have two small rubber mats on the floor now. I might just get one large rubber mat for the whole thing. I got some advice to use some sound-proofing with carpet over it because of the heat and sound. There is a large amount of noise when driving, especially on the highway. However, I feel it is more wind noise than mechanical.
What are your opinions on the best floor covering for these trucks?
I have raptor bed liner in there. Its performed well snd held up good. When dirty I hose it out. Simple

X2 on the Raptor liner especially for a work truck. $120 for the whole kit sprayer and all on Amazon. A more expensive alternative that gives some heat and sound insulation is lizard skin
I've never been a fan of carpet in a working truck. I put a molded rubber [not vinyl] floor in my F100 when I got it 8 yrs ago. The mat just covers the full floor & tunnel area ahead of the front seat, not under the seat to the rear cab wall. The rubber will eventually start degrading with time. I've just replaced it with another from Stock Interiors. When I replace the floor pans [soon] I will clean and paint with KBS Rust Seal [like POR], then fully coat the floor with KBS Undercoat, then overlay that with the rubber flooring. The rubber flooring acts as the sacrificial part of the floor that wears away from foot traffic, rather than the paint coating wearing away.
If you really want to go all-in, PO-15 covered by a bed-liner will work well. If you decide you want something removable over that, I have the original floor mat from my truck in decent (albeit not totally perfect) condition boxed up - was going to give it to someone here but they went a different direction. You pay postage, you can have it free.
I stripped the carpet and moisture holding padding out, fixed my floors, coated with brushed on rhino bed liner, liberally, ... then used some rubber backed 2'x2' squares of carpet to cut, fit, and then fastened in place with SS 1/4" bugle head screws, SS washers, and I used lock nuts underneath. The rubber backed carpet is stiff, but cuts well with straight edge and knife or band saw. I also made some aluminum under floor shields that those screws and nuts hold up against the floor underneath.
The seats are a set of 1986 50/50 Mercury Grand Marquis Leather like seats which had two center armrests, I think from a 2 door, but in the wider '77 F-150 they are about 4" apart at the center, so I built a drink holder/box for there. I did have to "build" a base for individual seat tracks. Hence ... the seat back release lever.
