Will you be off roading your truck? Those kits should be fine for most - just remember that power steering in any form only takes the burden off of the driver - the remainder of the system still has the same burden and these kits are designed for a 2WD truck. If you are 4 wheeling and get into a tight spot you'll probably fry the electric controller since it wouldn't be designed for that sort of stress. If you only plan to use your truck on roads and seldom use 4WD then I'd think you'd be OK.
If you do plan to 4WD it and want to keep the stock Gemmer setup you might look at a Garrison Ram Assist steering system. Here's a design used by Ford.

The 1961-1965 F100/F250 4x4 and 1966 F250 4x4 uses a different setup more like the 1961-1964 2wd trucks used. The steering gear is very close to the firewall. The column jacket runs from below the steering wheel into the steering gear so the shaft inside is not exposed.
The unit posted by Bloomgren from CJ Ponys parts - if you look at the left side of the steering gear it has a support for the column jacket to fit inside. I believe that should give the support needed on the uphill side. You'd still have to cut the column jacket and shaft somewhere inside of the cab so I don't see how that's a plug and play system, but it looks like it should work. There's also this in the Q&A section. Hopefully that is correct.

Hi, I have a power assist system from a '61/'64 F100/250. The system replaces the drag link and adds a ram to the tie rod. The system that I have is complete minus a bracket for the engine to mount a Saginaw pump that comes with said system.
The pump I have can be used or it could be changed out for a Eaton style pump.
I am asking $75. plus shipping from 49525.

But as long as I am here. I saw a video on a super cheap way to acquire electric power steering. I'm sure it could be found on Youtube.
Apparently You can use a system from a toyota prius, the system is supposed to be very easy to wire if you can get your hands on the gear and the stand alone PCM that goes along with it. If I remember correctly there is like only 3 wires to hook up and fab the power assist unit into the steering column.
The parts should be available from your local pick your part for less than $100.
