I keep having an oil pressure issue when my oil gets up to temp while driving and it runs perfect while I'm pushing the gas but when I get off the gas to stop the oil pressure gauge freaks out and the truck shuts off, I have no idea what to do I have replaced both oil pumps so I have not a clue on why I'd have bad oil pressure
Seems to me either your pick up tube is either cracked, has loose bolts or a bad seal. Also if your timing cover has deep grooves it time to remove engine and replace it. All are most likely worst case scenario's.
Did you have the issue before you changed the pumps or after? Why did you change the pumps?
The stock lpop gear only goes on one way,,,, Melling lpop does not matter.
IT had the issue when I bought the truck but wasn't bad so I drove it a while and it progressively got worse so I thought it was the hpop and that fixed the dying for a while but then when I changed my oil the gauge started acting funny so I thought it might be my lpop, no difference after other than my motor runs stronger( my old one was worn out a bit so the melling did help) so I heard someone say a bad oil filter could be the issue and I changed that and nothing still does it and died after driving 3 miles at a stop sign

Check the oil pressure while hot like HitmanX said. When you changed the LPOP did you check the timing cover to see if the old pump didn't damage the cover?

the cover looked ok but I'm not a mechanic so idk if I missed something
I can’t remember which sensor it uses, but if the truck thinks it is out of oil, it will shut off as a way to protect the motor. I can’t remember for sure, but if it has a bad ground and it thinks it is losing oil pressure it may shut the truck down. I second Eric thoughts on a mechanical gauge. The one in the dash is more of an idiot gauge than anything else. How well does it restart after having the problem?
As a test, you could start the truck then unplug the sender to see how the truck reacts.

after it dies it starts right back up and drives fine until I come to a stop again
