Rim diameter/width/offset

I bought this truck just a few days ago on Bring-a-Trailer. A one owner truck for 43 years that was manufactured in the Norfolk VA plant and lived its entire life in Benson NC. From an appearance standpoint, one of the things I like least about it are the wheels and tires......proportionately way too small relative to the body. My preference now is to switch to a steel wheel with an OEM-style center cap. Current rims are stock 15" (5.5" wide, I think). I'd like to go to a 16" rim that is 7 or 8 inches wide. I would probably use a 70-series all terrain tire with a diameter of about 31.5". To those who have already gone a similar route, does a 7 or 8" rim push the tire beyond the wheel cutout? Any rubbing issues? Any issues that would upset suspension geometry or alignment? By the way, I do plan to lift the truck, slightly, but not now. Probably will go with a 2" lift with Eaton coil and leaf springs. Last question is on offset, something I don't know much about. If you use a wider rim, can you send some of that extra width to the inside of the wheel well by changing the offset.....without messing anything up? Thanks very much!
