As far as getting the seal out. Are you putting the punch on the brown spot in the photo. That is a stiffening wire built into the seal. it will come out, I never had to loosen any other main caps in my long career.
Put a seal and new bearings in it and if it wasn't smoking or using tons of oil leave the rings alone. Drive it.

Agree with everyone. Fix this motor and build the motor you want while driving the truck. It may not be a big deal that you cannot drive the truck now but life happens. There are always half completed projects for sale because it is easy to lose interest in something just sitting in garage.

Since you didn't ask for Life Advice I won't give you any, but you did ask about 500 horsepower to that answer I would say a 385 series, 460 cubes will be your cheapest route. Period. As far as a manual tranny I cant offer any suggestions for a truck application as I have not done the research
