I have just purchased a 2018 F-150 Lariat, 3.5 L ecoboost with H-D payload pkg. which increased my GVWR to 7850 lbs., so I went from a 3.55 rear-axle to 3.73 and the gear set is now 9.75". My question is, how much will this affect fuel economy for both towing and normal driving?

With the 10 speed transmission you probably won't even notice it.
Here is a page that you can put in the gear ratios and it will show you the RPM for any given speed. It's less than 150rpm for the gear difference at 70mph in 7th gear and in 10th gear it is like 80rpm difference.
Thank you all for your input, it's more truck than I actually need for what I am hauling but I am more comfortable with too much truck than not enough, p.s. posting pics is out of my league but the door stickers confirm the increased GVWR of the truck.

Understood, just interested in how much payload the Heavy Duty Payload Package gives you i.e. payload listed on the yellow sticker.
