So the new pig has a GVWR of 11,100 and invoice for truck shows 6,589 shipping weight of the truck. Wouldn’t this leave a payload capacity of 4,511?

The sticker on mine says GVWR is 10,800lbs and 2,751lb payload. I went to the CAT scale a couple of weeks ago and weighed in at 8,480lbs. So according to the scale I have 2,230lbs of payload left.
Got to the scales today! still trying to get to the available pin weight for fifth wheel.
The truck with me in it and full of gas we are at 7280.... ive plugged in the numbers, the only unknown is the hitch.
i feel i will have right around 3k for pin weight.

Rear GAWR is 6,780, so subtract your scaled rear axle weight to get your remaining capacity on the rear axle:
6780 - 3160 = 3,620 lbs.
As you add passengers, stuff, hitch, etc, your rear axle capacity will be used a little. Absolute "sure fire" method would be to load up the tanks, the family, all the stuff and the hitch, then re-weigh on the scale.
In theory, you should run out of GVWR before you run out of GAWR

yep I understand. So a portion of the stuff will be distributed across both axles... and the only true way to know is like you said.
