For $350 I can get a disk brake conversion kit. That seems more than affordable. It seems to me that it would cost me that much to replace both rear drums, brake cylinders, shoes, and spring kit.

You need the upgraded calipers for a functional parking brake so add another 200.00 to the price. The kit still doesn't give you the same amount of braking surface area as the drum brakes. You can fully do the drum brakes for way less and do the upgraded wheel cylinders.

I haven't gone with that kit, I made my own kit using TMR Customs Dana 60 rear caliper plates + sourced my own stuff on RockAuto for the rest.
It's worth the upgrade. Keep in mind as ford390gashog mentioned, you won't have an e-brake with this approach. There's other ways to get an e-brake, but they're expensive.
I bought conversion brackets on ebay for $60 and loaded parking brake calipers from Ruffstuff for around $300. Then rotors from napa for about $50. When you piece it together yourself its not much more expensive than a complete kit and you get the e brake.
Keep in mind this may bring about the need to change your proportioning valve
