Trying to find
out if I can tap in to the stock coolant thermo sender with my aftermarket gauge on my 2003/4 f250 7.3 powerstroke ?

Probably not. If I recall, the appropriate sensor is needed for the gauge being used since they are electronic and different sweeps are available. VDO had multiple options back when I did that type of stuff.
