Industrial Simple Green - Soak for 30 minutes but don't let it dry, and then pressure washer. For areas where grease is caked on, Oil Eater works good at full strength and use a soft brush.
After you are done, then go back and regrease all the fittings with a zerk gun.
I would be ready with seals and gaskets for fluid filled items under the truck. I found that the grime was helping to seal the rear differential and once I cleaned it, there was a leak.
I've been wanting to do the complete underside cleaning, but am holding off till I can get the seals/gaskets for the trans and t case, both of which are pretty caked with gunk.

Scrape off all the thick stuff before you even think of using chemicals and pressure washing.
This plus oven cleaner. Way more effective than any de-greaser I have used. Heck, don't need the pressure wash. I have a pressure washer and several de-greasers, but I just use oven cleaner and a regular hose, 10x faster.
