I have a 2016, 5.0, supercrew, xlt, 4x4 with 43k on the odometer. Bought it used with 24k on the odometer in late November 2018. Is a secondary vehicle driven 2-4 times a week. 1st issue is I've noticed the last couple of weeks it puffs out blue smoke on startup, not everytime, maybe every 3rd-5th use...2nd problem is everytime I tow a trailer, the dash display sticks on the trailer display program and I have to toggle back to the speedometer display..any help for either problem appreciated.

Sounds like a leaking valve guide seal on probably one cylinder, hence the intermittent nature. If you're not losing a lot of oil in the deal and are willing to keep an eye on the oil level then it will probably not be worth repairing. If you are losing a lot of oil, you might find yourself with other issues including a fouled plug.
