ZooDad is a great resource for your current challenge IMHO. I remember a lot of Android and CarPlay issues being fixed by the time JR3T-14G381-AS 407Mb Sync3 v3.0.19205 25.07.2019 came out.
If you feel the update completed then make sure you turn off your truck, open/shut your driver door and then restart your truck AFTER everything goes dark. Check your version. The next thing you can try is a Sync reboot. While your truck is running hold the volume and seek right buttons in until you see the screen go dark. Check your version.
Today I deleted Android auto and re installed it. My phone went through an update. The phone is an S-9. I went through the prompts and required permissions... And this morning it worked perfectly. Voice commands and all. It wouldnt work for me on Mapquest. But it worked perfectly on Gmaps.
Im going to try again on the way home and see if it remains functional. It has gone south in the past.
Also as far as the cable. Im using an older heavy gauge cable I keep in my truck for charging. Interestingly it is a mini USB and the S-9 is the "C" type. So I am using an adapter.... and it worked fine.
I was concerned about that after the above comments about cables.
You may also have phone issues, but it sounds like the round of updates is getting you to a solution. I use Apple Carplay, with my iPhone, and if the phone is locked, even when plugged in with a quality cable to the USB port, it sometimes doesn't show. You have to "unlock" the phone, then Apply Carplay comes up and then you can select WAZE, Maps, or in your case google maps, and waze, toggle between all applications. Its actually the phone adhering to rules built in and the SYNC app. For example, when only blue tooth, unless I am stopped, it wont show me a text, but it will read it to me. If I am blue tooth, I can respond now with canned responses(Siri) but I can dictate when connected to the USB to the phone using the "Bluetooth" button on the phone.
OK... Update. The Gmaps Nav continued to work perfectly. I was also able to use my Amazon Music library and control it from the center screen. The volume control on the wheel worked but the skip control did not. I had to use the touch screen.
I cannot make calls now as the voice commands are now only for nav and it says it cannot comply if I try to voice command a call. I should point out that I use 2 phones. Both are listed on the Sync 3.
My touch screen now no longer functions for most functions that do not relate to Android audio. The Audio screen on the sync shows am/fm/xm/and my ipod. It will not switch between icons or connect to any of them. It tells me the component is not available when I try to connect to the ipod. Despite the fact it clearly shows. It disappears if I unplug the ipod and reappears when I plug it in. But does not acknowledge it as an available component. The icons react to the touch of my finger but nothing happens. It also has told me to unplug the ipod as it was "not a supported function"
I tried disabling Android Auto. Turning it on or off and nothing changes. I can switch to my hvac panel or to the android screens and to the snyc home screen. Sync home screen states "Audio Off" But when I press on the touch screen it reacts to my finger but nothing happens. I think if it would turn audio on or off there I could switch back and forth between my pre existing functions that Ive been using for a year now and the newly dominant Android auto screens.
The Sync 3 has been very close to pleasing me for 9 months. But in reality its pissed me off just as much if not more. Im thinking I either use the nav and Amazon music and figure out how to get the voice command dialing to work. Or delete Android Auto on go back. By the way in coming calls come in fine.
Seems like Ill need to completely delete Android Auto and hopefully be able to get back what I had before messing with it...
Its infuriating because the icons are there that should allow me to switch back and forth and use the options I have... but they wont function. This is why I stopped trying to use the nav in June.
Perhaps they have a tech at Ford who can show me the errors of my ways....

I hate to tell you this and I hope I’m wrong but it sounds like your APIM is dying and on it’s way out.
Yes Im under warranty. 10 months and 10,000 miles in. I guess its possible but this started exactly as I loaded the Android Auto in. If something is toast programming wise the Android Auto and permissions it requires changed something. Everything was fine before. Everything works well using the programming under Android. But it seems to have sidelined the stock program. Im going to go mess with it this afternoon and see what I want to do. The problem is I dont see a way back on the sync 3. I can easily delete Android auto off the phone but I have not been able to see any way to delete it from the truck. I might need the dealer to go in and reset back to factory. I might also live with it a while because everything works fine on the new screens Im offered. But not so much the original controls.

Glad to hear that you’re still under warranty and perhaps it was a coincidence or just bad luck that the actual SYNC system and it’s touch screen started having issues.
The non responsive touch screen is one of the symptoms I experienced when my APIM was acting weird.
The dealer has to actually see the non touch responsiveness of the SYNC screen before they order one.
I hope you’re able to get everything working properly soon.
Update... I did not go mess with it yesterday... But ran out this morning and plugged the Ipod in.... All controls have reverted back to normal. I dont know if I want to try connecting the phone for Nav again or not....It was perfect having it. But if I cant go back and forth at will Im not sure its that important to me. I can always use nav right from the phone. But it was a great improvement having it on the dash. I liked the functionality of it and it had the next turn showing on a panel to the left immediately following the previous turn. Thats a complaint I always have with my wifes Infinity. It gives no clue to the next turn until your close to it. In a place like NJ you might need to start moving that way considerably before the turn as the JOs will never allow you to move over without confrontation...
