1979 f100 302 starts right up, purrs, but misses and stutters and stalls occasionally. Truck does this cold. Doesn’t really get driven enough to warm up. I replaced cap, rotor, wires, plugs, fuel and air filters and no change. Any ideas?

No talking cleaned or rebuilt but actually tuned and set up. Carbs on occasion need to be tuned/adjusted. When we actually took vehicles for tune-ups on a yearly basis this was done at that time.
The Carb may just need to be readjusted/tuned.

Are you running ethanol-blended fuel? Gasoline carburetors do not like ethanol-blended fuel. I've had them leak and flood 3 days after a complete carburetor rebuild. I changed to straight gas and it was like I got into a different truck. Ran smooth, didn't die, didn't flood out, just by switching to a non ethanol fuel.
Unless it's a manual choke that's the first thing I'd check.

To set the auto choke just ignore the factory settings. At room temp (approx 72°F) the choke should be just past half-closed. That is where you want it set to..
Have you tried to adjust the choke system to the recommended settings? There's more to the system than just the choke blade, and it all has to be working together to work correctly.
On the topic of fuel... also remember that this is that time of year when there is still winter blend gasoline in circulation, which in warm weather can cause issues.
One thing to check is HOW the choke opens. Does it open more or less gradually? Does it stay almost closed until the engine is almost full temp? (How would you know if as you said you don't drive it till it gets warm?) Your choke could be opening 'way too fast... could look OK when cold but effectively rendering you choke-less within a few seconds. Like 68Flareside said, it's a system.
