I currently own a 2018 F150 max tow, I tow an 8,500 TT and drive to work once a week. We are beyond fed up with the F150 between the 10 speed trans bleed down issues, dash needing to ripped out due to warping, the timing chain and phasers are starting to rattle amongst other thing. Yes all things will be fixed under warranty with the exception of the trans that Ford calls normal a characteristic and is causing issues while towing.
The feedback I’m looking for is about the 6.7. I am mostly pleased how the 3.5 eco tows and have been interested in the 7.3 but concerned that I will be increasing the TV weight by 40% going from 5k to 7k while maintaining a similar TQ curve. And of course that increase will be well worth in stability when towing.
i have plenty of time on diesels before the new emissions standards and I’m not all comfortable with DPF, SCR, EGR etc due to lack of knowledge. Specially with DD. I commute to work once a week and it’s mostly open road and I tow about 1/2 the miles on my truck.
We camp 2 to 3 times a month and haul from Texas to FL, CO, NM, NV 3 to 4 of times a year.
Diesels are alot more money on upkeep over gas if you want it to run right for a long time. With what your pulling I would go with the 7.3 with 4.30’s personally. The difference in cost of gas vs diesel plus less maintenance cost you can by gas for a long time.
If you are use to towing with an ecoboost you will want the 6.7 especially if you tow in Colorado and other mountains
As far as the dash goes, the SD has the same cab so the same dash.
My 17 ecoboost has no engine problems that you speak of. I also have no problems with the transmission towing or not
Not the same dash on the F150 and SD. For some reason late 17 to early 19 Ford installed a bad batch of warped dash that would split at the windshield vents. There is a TSB for it. The first dash arrived damaged, we are waiting on a replacement now.
you nailed it on the head, the Eco will spoil you on how they tow for a gas motor.
Dont be fooled now the gas engines nowadays are strong. I have a 6.2 with 3.73 that I pull a 35’ dual tandem gooseneck and tractor on all the time probably total weight trailer and tractor between 11-12,000 and it pulls it just fine. I would bet the 7.3 with 4.30’s and that 10 speed would pull what you have easily.
Diesel(deleted) if you don't mind voiding warranty, don't have smog checks to worry about and have an xtra $8,000 to spend. Diesels are optimal if everyday towing is concerned.
Otherwise 7.3 is better option.

same cab, however the dash is different. The whole dash, instrument cluster and glove box is a one piece housing. It’s different between the two. But other than that the interior is virtually the same.
My last three personal trucks have been Diesel. And I drove a Big Rig for a living for 30 plus years. Diesels for towing are hard to beat! But I am DONE!
The fact that it costs 8K more for a 6.7, more for maintenance and in my area Diesel is as expensive as premium. Sure you get some of that back on resale because its a diesel, I get that part.
New diesel trucks to get the impressive numbers they have, it seems when things go bad, its really bad$$$$
On top of that I don't haul heavy stuff as much anymore and when I do the 7.3 gas motor with 4.30 gears will work for me.
I have come to terms about torque and fuel mileage and I am going back to gas. Its just a choice that fits my truck needs better.
I will still wave at you guys as you pass me going up the grade and while I am filling the tank!

Do what you want OP, but I agree with the above. My camper trailer is about 7,500 lbs and 32 feet, and I've been very pleased with the 6.2 V8 and 4.30 setup in my 250. I made the right decision going gas for me, and have towed about 7K of the 10K miles the truck has on it. For what it is worth I would have never considered the previous 5.4 gas motor in the SD, because I saw it as underpowered.

The two cabs are literally the same cab. Interior trims differ but the cab frame (the metal part) is exactly the same part.
OP: As others have said. You don't need a diesel tow 2 or 3 x per month. Especially only 8500lbs. Add in all of the additional costs for upkeep and repairs (God forbid) and it seems like a bad way to spend $9k imho.
I used to tow a 5,000 lb trailer with my 2009 Ford Expedition with the 5.4 liter motor. I then traded that for a 2012 Ford Flex with the 3.5 EcoBoost.
It was a night and day difference between the 2 motors. The EcoBoost was superior in every way to the 5.4 and the core reason was the low end torque of the twin turbo motor.
Going to the 7.3, while an amazing engine, will not feel the same coming from a EcoBoost F150 or moving up to the 6.7.
Plus turbo motors love altitude and towing in the mountains is a lot less stressful with turbo's rather than naturally aspirated.
