so, finally figured out the torque app and what I should be looking at. Its not throwing any O2 sensor codes and passes all the checks for the catalytic function. Also, I logged the O2 sensor functions. This is the result. from what I've been reading, this is a good result. The temps that I took with the IR gun lead me to believe the cats are not functioning correctly but this O2 data makes me think they are. Any thoughts?
I dont know about torque app... but i have an average Code reader and it will take a SNAP SHOT of 30 values at a specific time.. You punch a button and it records all the values at that time............. 4 of the values are converter temps in and out.

Hmm. I did a bit of looking around and it seems I have the inlet temp available but outlet temp is not an available sensor on my truck. It's either that or the OBD blu tooth reader I have doesn't transmit that info.

All four of your O2 sensors are working fine.
The bank 2 cat is storing oxygen just fine.
As Steve indicated, the bank 1 cat’s ability to store oxygen is questionable.
But without a cat code I’d do a little more investigating.
Get that IR temp gun on the bank 1 cat’s input and outlet.
I’d like to see those O2 sensor voltage traces as the throttle is being aggressively blipped.
You might pull out the bank 1 upstream O2 sensor and see if that relieves back pressure enough to help the power output. Note: Don’t misinterpret more noise for more power.
