I would not recommend the fitech, the software is junk. Based on my personal experience and I'm no stranger to EFI. I haven't tried sniper yet but the software SHOULD be better.
So far, I've had no issues with the Holley setup. Seems pretty intuitive and I had only one issue during start-up (which was entirely on me.)

Can't talk per software, but it's pretty well documented at least on the forums that Holley has the better, more responsive and more helpful customer service.
For FiTech, the facebook forum has been a boon to customers vs calling in to their customer service number.

I bought my kit through EFISystemPro.com and Chris was also super supportive when I had a few questions. The Holley system seems to have a lot more gurus in their ecosystem.
