My goal = gas engine [need to avoid diesel for health reasons]; 4x4; off-road; capability to tow ~10K#, so liking the 12,500# capability; tow up/down mountains. Will add truck cap and carry camping gear; sometimes more. Which better?

I love my 3.5 Ecoboost but if I were actually going to tow a consistently 10,000lbs. there would be no way I'd buy a half ton truck. Honestly, I don't know if I will buy another half ton truck anyway.
Will the F-150 pull it? Sure. Will it be happy, maybe. But I can tell you in the heat and elevation it will run warmer than the F-250. Plenty of people talk about running upwards of 240*. I've done that on flat ground in September in Texas (100*) out side with only 4000lbs. I do, however, have a Full Race intercooler that sits in front of the radiator. I just put in a 180 thermostat (stock is 188) so we'll see if it helps.
Honestly, for a 10k trailer, it's not a decision of engine choice but choosing the right truck for the job.
On paper, the F150 has the horsepower, torque and features; however, you can't put the feel of overall mass on paper.
The more robust frame, bigger brakes and heavier weight of the Super Duty aren't spectacular on paper but the drive is felt with much more confidence and comfort.
Having towed the same trailer (7500lbs), using the same hitch with a F150 eco and a F250 6.2, the F250 is the right choice.
Towing 10K with the bed topper covering a bed load of gear through the mountains, F-250 (or F-350 for more payload) with maybe the 4.30 gear ratio. Or the new 7.3 gas engine and 10 speed auto.
My 6.7L diesel engine is super clean. I'm recovering from throat cancer. If the exhaust was dirty, I wouldn't be able to handle it. I can stand right next to the tail pipe without any breathing issues.
