I am looking to do an EFI to carburetor. I have a 5.8L 351W engine out of a 1991 F250 with an automatic trans.
My question is, is it worth it and is it possible?
This has been discussed multiple times on here. There is no legitimate reason to downgrade to a carb. You'll spend more time/money converting it to a carb and tuning it then just fixing the efi system properly most of the time.
Can it be done? Anything can be done, doesn't mean it should.
There's not a lot of reason to downgrade to carb, but some do prefer it. I personally hate it. I love EFI, and I don't miss the carb days in my teenage years, cold starting, or flooding.
There is a member Freightrain that converted his 300, I6 to carb. He loves it, and explained what was basically needed to do the swap regarding fuel regulator and pumps. This is mandatory since EFI runs higher fuel psi and you need it down to 5psi or 7. I can't remember.
Granted, it was the 300, but I'm sure it's posted numerous time here on how to convert the 302 or 351.

Would you guys know how to get some more power out of the 351 with out spending to much? Maybe something less than $100.
A basic tuneup. New plugs, wires, cap, and rotor. Advance the timing to 12°. Honestly not much you can do for under $100.
If you’re ambitious and already possess most of the tools you can get an upper plenum off a truck 302 and home port it to your lower. Check out Scndsin’s thread about it here:
Yeah, $100 isn't going to get you anything substantial for power (and a carb swap won't pick up significant power by itself either and will cost WAY more than that).
