Expedition WAY smaller than expected

If all you are looking at is the 1st and second rows, might as well get a crew cab pickup and save something like $15,000 while picking up an optional 3rd seat in the front and more engine choices.
I guess where I am now is a low roof van (not sure if theyll have enough headroom. the midroof would require garage surgery, plus smack every possible branch in the woods) or a crew cab pickup. I'm not getting enough extra usable seating to justify paying 1/3 more with the Expedition.

We rented a Dodge van last summer for an extended road trip. For the purpose of ONLY moving people and luggage, a van is the best way to go as a family hauler. If you tow then you need a truck based SUV.
The third row in my '04 expy has only been used for small people (children) because of it's lack of space back there. But, it folds neatly into the floor so you can increase your cargo area without breaking your back on taking it out of the truck. It's all give and take and Ford currently has the most user friendly equipment WRT the third row and cargo access.
If the truck feels like it's not big enough for your family then there's nothing left to do but keep looking for one that is. The price of these vehicles has launched way beyond the stratosphere making the Honda and Toyota vans that much more appealing.

Did you slide the 2nd row seats back? They are adjustable. We have 2019 expedition max and two older excursions. We have friends with suburbans and tahoes. The excursion has most room. The expedition hs more passenger room. Seems like sub has more cargo space then the max? Either way besides a transit van the exp had most passenger room in 2019 vehicles. They say new 21 sub has the flat floor like expedition has alit of room too...?
