Check engine light

I have a 96 F250 5.8L that the check engine light comes on at highway speeds. Can't pull any codes because the light goes out once the key is turned off.

You should be able to at least do a KOEO test. That should display stored codes.

Any good code reader should show the stored codes after the engine is shut down.

ODB1 does not hold any codes. I've had it checked by several different scan tools. All give a 111 code. Which is everything is working fine

By design the OBD-I system is capable and will store codes.

Was the engine running when you tried to pull the codes? If so, that's not when the stored codes are displayed.

Negative....

Now that we know when you got your Code 111 (based on your response "All give a 111 code", which assumes you got that for the KOEO tests and the Stored Code display) you need to pull out the computer then inspect for signs of the very common leaking capacitor(s) and/or burned components/traces.

Since you did get a Check Engine Light previously there should be a stored code, unless the Keep Alive Memory (KAM) power is missing or the computer has an issue. Usually with no power for the KAM you will get a Code 512.
