So, in the process of putting my '49 F1 back together, it appears I have come to an issue with the way the choke cable attaches to the carburetor. Below is a picture of my carb:
Below is a picture that I found somewhere on the internet of what I believe is the correct setup for a 49 flathead V8:
Look like I possibly have the wrong arm installed on the carb and am missing the bracket to hold the cable sheathing. Not sure how this happened unless the guy who rebuilt my carb put the wrong parts back on mine by mistake. Is there a place I could acquire the correct parts?

You will definitely need a bracket to hold the choke cable sheath.
Also, yes the arm that actuates the choke should probably have an end like the one you showed in your second picture.
Your carb may not have been a "primary carburetor" and the type of arm on this is just to synchronize it with another on a dual or triple setup.
Often times on ebay you can find a junked up carburetor for parts and use what you need to make yours right... but your best bet might just be to ask your carb rebuilder if he has that part.
